Dash or vertical bar in titles?

Should I use a dash or a vertical line in title tags?

Matt Cutts says those are symbols and that they are looked at as spaces.

I think there's no agreement on that, it normally depends on personal choice. Normally I prefer to use all the separators just to make the site a little different and don't use always the same structure. However if I need to choose one I'll use user experience and readability for it, and personally I find the pipe much more readable than the hyphen just because separates better the sentences, However you may use a combination of both if the two portion of text are related.
Examples:
- Guide to Ibiza - Boat trip to Ibiza | IBIZATRAVELS.COM
- Hotel Ibiza | Bars and Restaurant in Ibiza
The first sentence (the last part is just for branding if you want although I don't love so much having the domain in the title), got an hyphen in the first part because boat trip seems to clarify which part of the guide to ibiza we're speaking about. The site name is not related that's why I put a pipe. In the same way I separated the two parts in the second option just because they're both about tourism in ibiza but they're not co-related in this case.

I have seen that most responses to that questions over time have been the slash line that separates words in the title. Not a dash but the slated vertical line.

Hi all, I am currently evaluating areas for optimization on my main domain. When doing this, Moz has identified multiple titles and urls that should be shortened and missing meta descriptions on my subdomain (a help center of sorts). Is it OK to shorten your brand name in your title tags
If your title tag is over 55 characters, is it generally OK or good practice to abbreviate your brand name (at the end of the title tag) for the sake of the other keywords in the tag?

Punctuation at the Start of Page Titles
one of my clients appears to be using an exclamation mark (e.g. "! Graphic Prints By Mirrorin - Fun Childrens Graphic Prints") and to be completely honest, I have no idea if this is bad practice or if it wont have any affect from an SEO point of view? Any help would be appreciated because it is site wide, therefore if it is an issue I would like to be able to get it sorted asap! Thanks

Multiple Cities in Title Tag
My question is how to avoid having a spammy title. Currently I'm working on a project where a business serves four cities, but two of them are out of its home state. I'm trying to create a title tag that is appealing to the eyes, and meets what I need it to do at the same time. I was wondering what everyone though of this sample Brand X Dealer Serving Newark, DE; New Castle, DE; Glens Mills, PA; and Springfield, PA I know that too much repetition can be a bad thing, but this might not be a big deal since they are separate instances. Is it better to include the secondary keyword or site name in a title tag?
When I add a site name to my title tag with long-tailed primary and secondary keywords the title tag is longer than 70 characters. I need to include all three parts, so what should I do? At 70 characters the site name is usually partially cut off. I do not want to get penalized by Google, but I need to include the site name to have consistency. I am using the format Primary Keyword-Secondary Keyword | Site name

Value in a bottom navigation bar?
How useful is it to have links in the bottom navigation bar? I'm considering to putting a mini site map in the bottom navigation bar but was told that these links carry virtually no SEO value and could actually hamper it as it would bring the total number of links on the page over 100.

Is it ok to use encoded special characters in meta titles?
I've read blog posts stating that encoding special characters in title tags is both ok and not ok. Any definitive answer out there? Do the extra characters from adding encoding count towards the total number of characters that Google displays in SERPs? Or do they just count as one character?
