Should I use https schema markup after http-https migration?

Dear Moz community,
Noticed that several groups of websites after HTTP -> HTTPS migration update their schema markup from, example :

}Interesting to know, because Moz website is on https protocol but uses http version of markup. Looking forward for answers

Schema.org has stated that using either is fine. Here is their longer form answer from their FAQ page on which to use:
"There is a general trend towards usingÂ
'https'Â more widely, and you can already writeÂ'https://schema.org'Â in your structured data. Over time we will migrate the schema.org site itself towards usingÂhttps:Â as the default version of the site and our preferred form in examples. However 'http://schema.org' -based URLs in structured data markup will remain widely understood for the forseeable future and there should be no urgency about migrating existing data. This is a lengthy way of saying that bothÂ'https://schema.org'Â andÂ'http://schema.org'Â are fine."That being said...I think I'll go switch Moz.com to https now.
Think they will keep http:// around for a while, though. Especially considering SEOs who implemented Schema before https and GÂ doesn't want to penalize site owners for not knowing any better? <- My personal thoughts on this.Thanks again!

JSON-LD schema markup for a category landing page
I'm working on some schema for a client and have a question regarding the use of schema for a high-level category page. This page is merely the main lander for Categories. For example: https://www.examples.com/pages/categories And all it does is list links to the three main categories (Men's, Women's, Kid's) - it's a clothing store. This is the code I have right now. In short, simply using type @Itemlist and an array that uses @ListItem. Structured Data Testing Tool returns no errors with it, but my main question is this: Is this the _correct _way to do a page like this, or are there better options? Thanks.

Using the same image across the site?
Hi just wondering i'm using the same image across 20 pages which are optimized for SEO purposes. I was wondering is there issues with this from SEO standpoint? Will Google devalue the page because the same image is being used? Cheers.

Should sitemap include https pages?
Hi guys, Trying to figure out some onsite issues I've been having. Would appreciate any feedback on the following 2 questions: My homepage (http://mysite.com) is a 301 redirect to https://mysite.com, which is under SSL. Only 2 pages of my site are https, the rest are http. Should the directory of my sitemap be https://mysite.com/sitemap.xml or should it be kept with http (even though the redirected homepage is to https)? Should my sitemap include the https pages (only 2 pages) as well as the http? Thanks, G

Should I use rel=canonical on similar product pages.
I'm thinking of using rel=canonical for similar products on my site. Say I'm selling pens and they are al very similar. I.e. a big pen in blue, a pack of 5 blue bic pens, a pack of 10, 50, 100 etc. should I rel=canonical them all to the best seller as its almost impossible to make the pages unique. (I realise the best I realise these should be attributes and not products but I'm sure you get my point) It seems sensible to have one master canonical page for bic pens on a site that has a great description video content and good images plus linked articles etc rather than loads of duplicate looking pages. love to hear thoughts from the Moz community.

Blocking HTTP 1.0?
One of my clients believes someone is trying to hack their site. Â We are seeing the requests with a server protocol or HTTP 1.0 so they want to block 1.0 entirely. Will this cause any problems with search engines or regular, non-spamming visitors?
